Founder and principal, Kimberley Hocker, has scoured the Catalonian countryside in her search for the region’s finest Cavas. She prides herself on the strength of her personal relationships with some of Penedes’ most acclaimed boutique Cava producers. It is her mission and passion to introduce these artisanal, small-batch sparkling wines to the American customer. REXACH BAQUÉS GRAN CARTA BRUT
Tasting Notes:
A pale straw color and very brilliant. The bubbles are fine and persistent. The aroma is elegant and in perfect equilibrium with the fruit notes characteristic of the grapes as well as those refined with the aging. The mouth repeats deliciously the aging notes on the nose, it is structured yet fine and delicate. The finish is long. -

Tasting Notes:
A pale straw color shows reflections of new gold with fine bubbles. Soft and elegant aroma of apples accompanied by a nutty smokiness. The mouth is creamy and delicious with a well-balanced sweetness and acidity. The finish is persistent and soft. -

Shiny straw color with aromas of dried herbs. On the palate, toasted brioche, candied fruit and citrus. Balanced acidity with a long creamy finish. -

This is an exceptional rosé Cava with finesse, elegance and floral aromas. On the palate it has beautiful notes of red berries and pomegranate. -

TRESARAS RED CRIANZA
Tasting Notes
Red wine produced from Tempranillo 85%, Garnacha 10% and Graciano 5%. Aged for 12 months in French and American oak barrels. Clean and bright ruby in colour. With aromas of red fruit jam with cocoa and vanilla. Very structured tannins with notes of cocoa. Elegant on the palate, mild and round finish with a lingering aftertaste. -

LO VIROL WHITE WINE
Tasting Notes:
Produced from Chardonnay 25%, White Garnacha 18%, Gewürztraminer 17%, Sauvignon Blanc 15%, Muscat 15% and Albariño 10% grapes. Straw yellow in color. Varied in aroma with ripe white fruit (peach, apricot), tropical fruits (ripe pineapple) with vegetal notes. On the palate it is silky, warm and fresh, with a large and fruity aftertaste. -

GUILLAMINA COSTERS DEL SEGRE
Tasting Notes
Produced from White Garnacha 40%, Chardonnay 17%, Sauvignon Blanc 12%, Gewürztraminer 13%, Muscat 10%, Albariño 8% grapes. It is a light white straw in color with green hues and presence of some carbonic due to the youthfulness of the wine. It has the aroma of ripe white fruits (apple, banana, pear) and tropical fruits (pineapple, passion fruit) with a slight presence of vegetal notes (green grass). On the palate it is silky with a medium acidity and a long and fruity aftertaste. -

QUINTA DE SANTA EUFEMIA LBV 2011 PORT
Tasting Notes:
Color is very dark ruby. The nose is intense full of mature fruit/compote such as red currant and plums. It is spicy (cinnamon and licorice) with mineral notes. Overall very structured with young red fruit notes that are very present, tobacco leaf, leather with a hint of cocao. Tannins are present and show a great aging potential. The LBV is young and definitely showing complexity. -

QUINTA DE SANTA EUFEMIA 10 YR TAWNY
Tasting Notes:
Brown in color with green reflections. Complex aromas of sandlewood, violet, honey and nuts. In the mouth, there are complex notes of dried fruit, nuts, apricots and exotic wood. Very spicy with some acidity. Very persistent. -

QUINTA STA EUFEMIA COLHEITA
Tasting Notes:
Dark brown in color. Intense aromas and flavors with a great complexity in the mouth. It is very well structured with great aging potential due to the type of grapes used and the excellence of the casks in which it aged. It has a long finish.
AN INTRO TO CAVA
Cava, Spanish sparkling wine made in the méthode champenoise, was first produced by Don José Raventós, head of Codorníu winery, in 1872. Today, there are over 175 Cava producers in the Penedés region which lies to the west of Barcelona. The Penedés area is set off by the natural boundaries of the Montserrat Massif to the north, and the Mediterranean Sea to the east and south. A great many micro-climates are within the region. The principal grape varieties grown in Penedés and used to make Cava are: Xarello, Macabeo and Parellada. Cava is part of the everyday Spanish life which places priority on gathering with friends over lengthy meals. Salut!
